Pesto

How better to spend the first day of Spring in the kitchen making Pesto.

Hubby grows herbs and others through the winter and the Basil was crying to be used.

Added to that, we're traveling overseas in a few weeks and the Basil would have been lost.


So the morning was spent processing the luscious Basil.

As we had big bag of walnuts that was intended for the granola I decided it could spare a couple of cups of nuts.

After filling, I topped the jars with more oil and they'll sit in the cold cellar till we return.

(There's a very good chance that half jar will disappear this week!)





















Garlic, Romano cheese, walnuts, olive oil and some salt.
